healthy cooking

as Ive mentioned before, I love cooking. It's a way to disappear in your own little kitchen world and whip up something to make someone elses taste buds happy, (such as huzby's). I don't cook like Ina Garten where I start every recipe with a stick of butter or Paula Deen's "everything is better fried" mentality but I could do better. What I'm asking is, does anyone have any suggestions for a healthy cooking cookbook or website? I see a lot with just a mad variety of salads. Now, salads are great, but I get tired of lettuce... my apologies to lettuce. You are good, but I get sick of you very fast. anyways... now that I am finished apologizing to produce I'd like to ask for your favorite HEALTHY recipes. Any for tofu would be rad. either put a recipe in the comments or send me a link in the comments... I'll be forever grateful and so will huzby.

Did I send you the eggplant/tofu stirfry recipe? I couldn't remember, but that is delish!

Tofu stirfries in general are some of my favorite things to make. You can add whatever veggies you like with the tofu and cilantro, sesame seeds, soy sauce (or whatever flavoring you like).

And my mom has a cookbook is one of my favs for veggie meals, but I can't remember the name right now. I'll check for you tonight. It is from a restaurant in Canaan Valley, WV. VERY GOOD AND VERY YUMMY! She is going back there in a couple weeks and can pick you up a copy if you want! I'll send more details soon.
